Eclair (or Cream Puff) Recipe

Ingredients

For the dough:

110g butter
1 cup water
1 tablespoon sugar
Pinch of salt
In a saucepan, combine the butter, water, and sugar. When it boils, add 1 cup of flour all at once and mix well for a few minutes. Let it cool.

Once cool, add 4 eggs one at a time, beating constantly with a mixer.
This step is very important. The eggs need to be incorporated into the dough thoroughly. The more you beat, the better the dough becomes. Transfer the dough to a piping bag and pipe it onto a baking sheet lined with parchment paper as shown in the video.

Bake in a 200-degree oven for 15-20 minutes (until golden brown), then lower the temperature to 150 degrees and bake for another 20-25 minutes.
The dough should be beautifully golden and have a hollow structure.
(Do not open the oven door during baking to prevent the dough from collapsing. Lower the temperature and continue baking to dry out the inside.)

Pastry Cream Ingredients

3 cups milk
3 egg yolks
2 teaspoons vanilla extract (or 1 teaspoon if using vanilla bean paste)
1 cup sugar (add a few more tablespoons if you like it sweeter)
3 tablespoons flour
3 tablespoons cornstarch
Cook everything, stirring constantly.
Transfer to another bowl and place a piece of plastic wrap directly on the surface of the cream (to prevent a skin from forming).

When the cream is cold, add 3 tablespoons of whipped cream and 100 ml (half a container) of heavy cream and beat with a mixer until you reach the desired texture. Refrigerate and use only when cold.

Melt chocolate and coat your eclairs after filling them.
