Red Velvet Crepes with Berries

Ingredients:

2 eggs
35g sugar
12g vegetable oil
190g milk
60g cake flour (or gluten-free flour)
Red food coloring
1 teaspoon vanilla extract
Filling:

180g whipped cream
20g sugar
30g mascarpone cheese
Diced strawberries
Waffle or cake pieces (optional)
Fresh strawberries
Blueberries
Powdered sugar
Instructions:

Batter: In a bowl, mix the eggs, sugar, oil, milk, flour, red food coloring, and vanilla extract until smooth. Sift the batter twice.
Cooking: Heat a non-stick pan over low heat. Pour some batter, tilting the pan to spread it evenly. Remove any excess batter. Cook for about 1 minute or until the crepes easily come off the pan. Repeat until all batter is used. Let cool on a rack.
Filling: Whip the cream with sugar and mascarpone until stiff peaks form. Transfer to a piping bag and refrigerate.
Assembly: On a crepe, spread whipped cream, add waffle or cake pieces (optional), more whipped cream, diced strawberries, and roll up. Tie with kitchen twine (optional). Garnish with fresh strawberries, blueberries, and powdered sugar.
Tips:

If you can't find cake flour, you can use all-purpose flour sifted three times.
For a gluten-free version, use rice flour or a gluten-free flour blend specifically for crepes.
You can substitute mascarpone with cream cheese.
