Cheddar cheese souffle castella🧀
(21.5*9.5*9.5cm pan)

Ingredients:
Whole milk 50g
Unsalted butter 30g
Mascarpone cheese 100g
Eggs 4 (separated into yolks and whites)
Vanilla extract 5g
All purpose flour 32g
Cornstarch 16g
Sugar 80g
+ sliced cheddar cheese (6 slices)

Instructions:
1. Preheat the Oven: Preheat your oven to 200°C (392°F).
2. Prepare the Cheese Mixture:
* In a microwave-safe bowl, combine the milk, butter, and mascarpone cheese. Microwave just until the butter melts.
* Add the egg yolks and vanilla extract. Sift the flour and cornstarch into the mixture and stir until combined and smooth.
3. Make the Meringue:
* In another bowl, beat the egg whites until frothy.
* Gradually add the sugar in three portions, beating well after each addition, until smooth peaks form.
4. Combine Batter and Meringue:
* Add one-third of the meringue to the batter and gently fold to lighten the mixture.
* Add the remaining meringue in two additions, folding gently each time to maintain the airy texture.
5. Bake:
* Pour the half of the mixture into a prepared mold. Add cheddar cheese and pour the remaining batter. Place the cake pan in a larger baking dish. Pour hot water into the larger pan to come halfway up the sides of the cake pan.
* Bake in the preheated oven for 10 minutes. Reduce the oven temperature to 150°C (302°F) and bake for another 25-30 minutes.
6. Cool and Serve:
* Remove the castella from the oven and let it cool slightly.
* Enjoy it warm or cold! (For the best flavor, refrigerate overnight and serve the next day.)
