Ingredients For Aloo Anday Ki Bhujia:

• 3 medium potatoes, peeled and diced
• 4 large eggs
• 1 medium sized onion, finely chopped
• 1 large tomato, chopped
• 1 green chili, chopped
• 1 teaspoon cumin seeds
• 1/2 teaspoon paprika powder
• 1 teaspoon red chili powder
• 1/2 teaspoon turmeric powder
• 1 teaspoon coriander powder
• 1 teaspoon salt or to taste
• 1/2 teaspoon chili flakes
• Fresh coriander leaves, chopped (for garnish)
• 1/2 cup ghee
• 1 cup water

Instructions:

1. Whisk the eggs in a bowl and set aside.
2. Heat ghee in a wok over medium heat.
3. Add cumin seeds and let them sizzle for a few seconds.
4. Add the finely chopped onions and sauté until they turn golden brown.
5. Add the chopped tomato and cook until it turns soft.
6. Add red chili powder, paprika powder, chili flakes, turmeric powder, coriander powder and salt. Cook for a minute.
7. Add the diced potatoes to the wok. Stir to coat the potatoes with the masala.
8. Add 1 cup of water and mix well. Bring it to a boil.
9. Cover and cook on low heat until the potatoes are tender.
10. Once the potatoes are cooked, add the whisked eggs.
11. Cook on high heat for 3-4 minutes, or until the eggs are fully cooked.
12. Garnish with chopped green chili and coriander leaves.
13. Serve hot with roti, paratha, or naan.
