Senator Blackburn's Sourdough Bread Pudding

4 cups bread cubes
2 cups green apples, diced
1/3 dried cherries, soaked
2 1/4 cups milk
1 cup brown sugar, packed
1/4 cup butter
2 large eggs
2 teaspoons cinnamon
1 teaspoon vanilla flavoring

Directions:

Combine bread crumbs, apples, and dried cherries in a 12 inch casserole dish.
In a saucepan, combine milk, sugar and butter.
Warm over a low to medium heat. Do not boil.
After butter is melted and mixture is smooth, add vanilla and cinnamon.
Pour warm mixture over the bread crumbs and apples.
Whisk the two eggs. Pour over the mixture and stir.
Bake in a 350 degree oven for 40 minutes.
Serve hot with vanilla ice cream and caramel sauce.
