Here is the full recipe.
Warning - Please watch your eyes when handling chilli !
Green onions
Pardon Chilli
Red onion
Tomato puree
Red tomatoes
Green Chilli
Fresh Jalapeno
Pork Belly
Lime
peppered leaf
Garlic cloves
Black pepper
Salt - only half a spoon - maximum !
Fresh Avocado
Butter - 30grams

- Ready

Very hot pan or surface/grill.
Place pork belly on and lightly salt and pepper each side - Just a sprinkle
cook onions and peppers on the side with your pardon chilli.
put on your green onion - oh yeah - Butter them - just a slight spread or tiny square - cross them with a knife so the butter works its way into them - tasty!
Start cutting your pork in small squares keep turning use no butter or oil.
now cut some garlic into tiny pieces - mix with the peppers and red onions - Spread some spice (Tom/Spicy/BBQ) over the pepper mix and mix well !
Keep cooking and turn them over and over.
watch your pork you want it to cook well but also evenly take it off if its over cooking. - 15 minutes tops for the grilling / cooking and no more !

Now for my hot sauce - are you Ready ?

Green chilli, Jalapeno, Pardon pepper, Fresh red pepper, tomato puree, fresh tomatoes (at least two large ones), tiny pieces of red onion, tiny amount of olive oil and mix very well, keep stirring for three minutes at least and try and use a mortar to break it all down please. make it thick and dreamy.
Now plate up serve and enjoy !
