Lotus Biscoff Muffins Recipe

Ingredients For Lotus Biscoff Muffins:
• 1 and 1/2 cups all-purpose flour
• 1 and 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/8 teaspoon salt
• 2 eggs
• 1/3 cup brown sugar
• 1/2 teaspoon vanilla essence
• 1/2 cup oil
• 1/3 cup buttermilk
• 1/2 cup Lotus Biscoff spread
• 4 crushed Lotus Biscoff cookies
Instructions:
1. Preheat your oven to 400°F. Line a muffin tin with 6 tulip muffin liners.
2. In a large bowl, sift together the flour, baking powder, baking soda and salt. Mix well. Set aside.
3. In another bowl, beat the eggs, brown sugar, and vanilla essence together until the mixture is light and fluffy.
4. Add oil, buttermilk and lotus biscoff spread to the egg mixture. Beat until well combined.
5. Add the flour mixture and mix until just combined. Be careful not to overmix.
6. Gently fold in the crushed lotus biscoff cookies until evenly distributed throughout the batter.
7. Divide the batter evenly among the 6 muffin liners.
8. Bake at 400°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F and continue to bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
9. Allow the muffins to cool in the tin for a few minutes.
10. Drizzle some melted lotus biscoff spread over the cooled muffins.
11. Serve and enjoy!
