Bread Malai Roll Recipe:

Ingredients:

For the Rabri Milk:

• 3 cups milk
• 1 tablespoon sugar
• 1 cardamom
• 1/3 cup milk powder
• 1/8 cup malai (homemade cream)
• 1/2 tablespoon chopped almonds
• 1 tablespoon chopped pistachios
• A few strands of saffron

For the Khoya:

• 1 cup milk
• 1 and 1/3 cups milk powder
• 1/4 teaspoon cardamom powder
• 2 tablespoons malai
• 1 tablespoon sugar
• 1 tablespoon ghee

For the Rolls:

• 8 slices of white bread

Instructions:

1. Prepare the Rabri Milk:
• Add milk, cardamom into a heavy-bottomed pan. Mix well and bring the milk to a boil over medium heat.
• Once the milk comes to a boil, add sugar, milk powder, malai, chopped almonds, pistachios and saffron strands. Mix well and cook on medium-low heat until the milk reduces to about half of its original volume.
• Once the milk has reduced to half of its original volume, turn off the heat.
• Transfer the rabri milk into a jug and let it cool completely.

2. Prepare the khoya:
• Add milk, milk powder, malai, sugar and cardamom powder in a bowl. Mix until well combined.
• Heat a non-stick pan on low heat and add 1 tablespoon of ghee to it.
• Once the ghee melts, add the milk powder mixture to the pan.
• Cook the mixture on low heat, stirring continuously, until it thickens and starts to leave the sides of the pan.
• Once the khoya reaches the desired consistency, remove it from the heat and let it cool down completely.

3. Assemble the Rolls:
• Take a slice of bread and cut off the crusts.
• Flatten the bread slice evenly with a rolling pin.
• Spread 1 tablespoon of khoya on one side of the bread slice. Carefully roll the bread slice tightly, ensuring the filling does not spill out. Repeat the same process with the rest of the bread slices.
• Place the prepared rolls in a serving dish.
• Pour the prepared rabri milk over the bread rolls.
• Drizzle saffron milk.
• Garnish with chopped pistachios and rose petals.
• Refrigerate the bread malai rolls for at least 1-2 hours before serving.
