🥘Ingredients:
- chicken legs and thighs
- onions
- potatoes
- carrots
- eggplants
- red bell peppers
- tomatoes
- vegetable oil
- herbs
🥘For marinade:
- 2 garlic cloves
- 1 Tbsp salt
- 1 Tbsp chicken seasoning
- 1 Tbsp pepper
- 1/2 Tbsp turmeric
- 1 Tbsp lemon juice
- 1 Tbsp vegetable oil
📝Directions:
1. Make chicken marinade. Mix garlic, salt, chicken seasoning, pepper, turmeric, lemon juice and vegetable oil. Place chicken legs and thighs in the marinade and mix until well coated. It is preferable to cover the bowl and marinate for at least 1 hour. However, if you haven't marinated it beforehand it tastes great as well.
2. Cut onions into strips.
3. Pour in some vegetable oil to coat the pan.
4. Spread the onions in the pan.
5. Add marinated chicken legs and thighs.
6. Place potatoes in a bowl, add oil, salt, pepper, toss all together and then spread them in the pan.
7. Cut carrots into slices, add some oil and spread them in the pan.
8. Cut eggplants and add some salt. Set them aside.
9. Put the pan in the oven preheated to 180°C for about 15 minutes.
10. Add the eggplants, red pepper and tomatoes.
11. Roast for about another 45 minutes until chicken legs and thighs are fully cooked and potatoes are golden brown.
12. Add herbs before serving.
