Simple eggplant stew recipe | Easy and cheap dinner!

🥘Ingredients:
eggplant - 3
bell pepper - 3
tomatoes - 3-4
onion - 2
garlic - 3 cloves
salt - to taste
black pepper - to taste
paprika - 1/2 tsp
coriander - 1/2 tsp
thyme - 1/2 tsp
chili pepper - ½
vegetable oil

📝Instructions:
Cut eggplants in round form slices
Sprinkle them with salt and set aside
Cut bell peppers in square form pieces
Chop onions, herbs and chili pepper
Mince garlic cloves
Mix the garlic, herbs and chili pepper
Mix the spices
Fry the eggplant slices until very light golden brown each side
Fry the onions and bell pepper
Fill the pan with layers of eggplant, bell pepper, onions, mixture of spices and mixture of herbs/garlic/chili pepper
Add salt (if necessary) to taste. Note that the eggplants have already been salted
Repeat the layers. The order of the layers doesn’t matter
Close the pan and stew the dish for about 30 minutes.
