I found a delightfully simple peach cobbler recipe in a locally published cookbook, and I just *had* to give it a go! You can find the full recipe text below. Blessed Litha!

Recipe from "Foods à la Louisiane," Louisiana Farm Bureau Women, 1980
Peach Cobbler from Mrs. Linda Sue Anderson of Monroe, Ouachita Parish:
1 c all-purpose flour
1 c sugar
1 1/3 c milk
20 oz canned sliced peaches, undrained
1/2 c melted margarine [or butter]
1 tsp vanilla extract
Combine all ingredients. Mix well. Pour into a lightly greased casserole. Bake at 350 degrees for 45 minutes or 1 hour or until lightly browned. Yield: 4 servings.
