Traditional Village Cooking: Authentic Mutton Heart and Liver Korma Recipe
Grilled Heart and Liver with Onions, Potatoes, and Local Bread
This dish is made from calf heart and liver, one of our traditional foods.
In the past, when modern electric appliances like refrigerators were not available to store food, various meat products were preserved using this method.
They would fry the meat or organs in sheep fat, place them in clay pots, and cover them with melted sheep fat.
The fat would solidify, preventing air from reaching the contents of the clay pot.
The pot was then placed in deep holes to keep it away from heat, allowing the food to be stored and consumed during colder seasons.
Today, we will cook this dish with fresh heart, liver, and vegetables since we have modern preservation methods and don't need to store food for later use.

Ingredients:
Heart
Liver
Potatoes
One onion
Bell pepper
Tomatoes
Hot pepper
Tomato paste
Red pepper
Turmeric
Salt
Instructions:
Fry the potatoes, onion, and bell pepper with the hot pepper and spices in oil, then set them aside.
Fry the heart, liver, and other meat ingredients. Add salt and a bit of tomato paste.
Combine the previously fried vegetables with the meat mixture, placing halved tomatoes on top.
Add some water and let it simmer until cooked through.
Enjoy this delicious traditional dish with freshly baked local bread. 😋
