Crispy Tofu Curry Udon
Ingredients:
1 block silken tofu (thawed and pressed after freezing)
season with salt and pepper
1/4 cup plain flour
1 tbsp nutritional yeast
salt and pepper to taste
1/3 cup water
For the breading:
1 cup toasted breadcrumbs
1 tbsp nutritional yeast
Air fry at 180C° for 12-15 minutes (flip halfway through)
spray with coconut oil

Curry Udon:
1 white onion
1/2 carrot
1 stalk green onion
1 tbsp olive oil
2 cups mushroom broth
1 cup water
2 cubes japanese curry roux
1 tbsp low sodium soy sauce
200g udon noodles
black sesame seeds for garnish
