The BEST Corned Beef and Cabbage - Quick & Easy Instant Pot Recipe
If you're wondering, "What's for dinner?" then I've got you covered! 🍀 Last year on St. Patrick's Day, I tried Corned Beef and Cabbage for the first time and absolutely LOVED IT! I've been eagerly waiting almost a whole year to share this Quick and Easy Instant Pot Recipe with you. Trust me, if you haven't tried it yet, YOU MUST!!!
Ingredients:
2 pounds trimmed, lean corned beef brisket
3 medium carrots, peeled and cut into 1-inch chunks
1 onion, cut into 4 pieces
1/4 cup chopped fresh parsley
2 bay leaves
1 medium head cabbage, cut into 6 wedges
Directions:
Place the corned beef brisket, carrots, onions, parsley, and bay leaves in the Instant Pot. Add 3 cups of water.
Cover and cook on high pressure for 1 1/2 hours. Allow for natural release, then open.
Add the cabbage wedges on top, cover, and cook on high pressure for 3 minutes. Perform a quick release.
Remove the meat and slice.
