Creamy Chicken Fettuccine Alfredo Recipe

INGREDIENTS

2 chicken breasts (150g per breast)
2 cloves of minced garlic
250ml milk and 250ml heavy/double cream combined
200g fettuccine pasta
50g parmesan cheese
30g unsalted butter
20ml olive oil
Parsley
Black pepper
Salt

METHOD

1. Boil the fettuccine pasta in salt water
2. Cut the chicken breast into thin slices
3. Add olive oil to a cast-iron frying pan on a medium heat
4. Add the chicken
5. Season with black pepper and salt
6. Cook for approximately 5 minutes
7. Remove chicken from the frying pan, and leave aside
8. Add the minced garlic to the pan and stir
9. Add the butter and half & half mixture
10. Take half a jug of pasta water and add to the sauce
11. Add black pepper and salt
12. Grate parmesan
13. Mix until sauce thickens
14. Add the chicken
15. Drain and add the pasta
16. Stir well
17. Grate parmesan on top
18. Garnish with parsley
