Easy Chicken Parmesan Recipe!

INGREDIENTS

2 chicken breasts (150g per breast)
1-2 eggs
1 onion
1 cup of panic breadcrumbs (75g)
1 tsp garlic powder (x2)
1 tsp onion powder
1 tsp oregano
1/4 tsp chilli flakes
350ml tomato puree/passata
200ml sunflower oil
20ml olive oil
125g mozzarella
100g plan/all-purpose flour
75g parmesan
Salt
Black pepper

METHOD

1. Slice the chicken breast in half
2. Season with salt and black pepper
3. Turn over and season the other side
4. In a bowl, add panko breadcrumbs, onion, garlic, oregano, parmesan, salt and black pepper
5. Mix with a whisk
6. In a bowl, add plain/all-purpose flour
7. In a bowl, crack an egg and whisk
8. Heat sunflower oil in a cast-iron frying pan
9. Dip the chicken in the flour
10. Dredge in the egg
11. Coat in the panko breadcrumb mix
12. Fry for 3 minutes
13. Turn the chicken over and fry for 3 more minutes
14. Remove and set aside
15. Finely chop an onion
16. Heat olive oil in a frying pan
17. Pour in the tomato puree
18. Add garlic, chilli flakes, salt and black pepper
19. Stir the sauce until it thickens
20. Pour the sauce over the chicken
21. Place mozzarella slices on top of the chicken and grate parmesan all over
22. Put in the oven at 180c/460f for 10 minutes
