Cabbage in a sandwich? I never imagined this could be so incredibly delicious

Ingredients:
1 tortilla
3-4 eggs
150-180g cabbage
2 spring onions
1 small onion
3 tablespoons carrot sticks
Salt and pepper to taste
1 teaspoon sugar
Ketchup
Mayo
Mustard
American cheese
optional: ham or smoked chicken/turkey breast

Preparation:
1. Cut the cabbage into fine strips, cut the onion and spring onion into fine rings, julienne the carrot.
2. Beat the eggs into a large bowl, season with salt and pepper and 1 teaspoon of sugar and whisk. Then add the chopped vegetables and mix well.
3. Place mayo and ketchup in a small bowl and stir until combined. Then spread the mix on one side of the tortilla.
4. Add a little butter to the pan and then add the egg and vegetable mixture and spread it out so that you have a round vegetable omelette, but slightly smaller than the bottom of the pan. Fry on medium heat.
6. When the bottom side of the vegetable omelette is browned and slightly crispy, place the tortilla on top (with the coated side down) and flip the omelette . Then reduce the heat to low.
7. Spread the cheese on one half and wait until it starts to melt, then place the meat on top and generously spread mustard on top. Noe fold the tortilla and fry it briefly on each side until it is crispy.
