Ingredients for Mexican Rice (Serves 100+):

12 cups Basmati rice (5 pounds / 2.27 kg)
20 cups water + 1 cup water for blending tomatoes
1 cup olive oil
1 cup Natural Knorr tomato chicken bouillon
15 ripe vine tomatoes or 17 Roma tomatoes
9 medium onions
20 garlic cloves (2 whole garlics)
2 Anaheim peppers (stem and seeds removed)
2 Tbsp white vinegar
Cooking Instructions:

In an 8-quart clay pot, bring water and rice to a boil.
Simmer for 30 minutes (plus a special tip shared in the video).
Let the rice cool before freezing if you plan to store it.
