Cook with Cylia #7 - Cheese pasta with zucchini

Ingredients (for 2 servings):
- 1 x Zucchini
- 0.5 x Clove of garlic
- 250 g Mezzaluna 4 Cheese or Raviolis (250g - 2 servings)
- 0.5 x Yellow onion
- 20 g Grated Parmigiano Reggiano
- 25 g Pine nuts
- 250 g Tomato purée

Preparation

1. The Tomato Sauce
- Finely chop the onion.
- Press or chop the garlic.
- In a saucepan, heat a drizzle of olive oil over medium-high heat.
- Sauté half of the onion for about 5 minutes
- After 5 minutes, add the zucchini
After 5 minutes, add the garlic, tomato purée, and water, then simmer on low heat for 10/15 minutes. Season with salt and pepper.
- Tip: Add a teaspoon of sugar to reduce the acidity of the sauce.

2. The Mezzaluna
- Bring a pot of salted water to a boil.
- Cook the mezzaluna according to the package instructions.
- Once cooked, add them to the skillet with the zucchini. Mix well.

4. Serve
- Serve your four-cheese mezzaluna with zucchini with tomato sauce, and sprinkled with Parmigiano Reggiano and pine nuts. Enjoy immediately!
