These delicious Eggplant Veggie Balls are made with roasted eggplant, spices, and fresh herb then topped with savory mushroom gravy sauce. So tender and flavorful, you won’t even notice they’re completely meat-free.

Eggplant Veggie Balls w/ Mushroom Gravy
Ingredients:
Eggplant Balls:
4 medium eggplant
air fry at 195°C for 15-17 minutes, flip halfway
3 cloves garlic
1 medium red onion
1/8 cup parsley
1 tsp celery powder
2 tsp smoked paprika
1/4 cup nutritional yeast
1 cup toasted bread crumbs
1/2 cup oat flour
salt and pepper to taste
air fry at 180°C for 15-20 minutes, flip halfway
spray with coconut oil

Mushroom Gravy:
1 tbsp olive oil
1 tbsp non-dairy butter
1/8 cup flour
300ml mushroom stock
1 tbsp soy sauce
salt and pepper to taste
top with parsley for garnish
best serve with rice
