Easy cranberry cake recipe | Amazing dessert for tea!

This easy lemon-glazed cranberry cake recipe is amazingly delicious! The combination of sour cranberry and sweet batter is perfect!

🥘Ingredients:
eggs - 2
sugar - 100 g (or to taste)
sour cream (or plain yogurt) - 100 g
*melted butter - 40 g
*vegetable oil - 40 g
plain flour - 250 g or more (depending on eggs size and on the sour cream thickness)
baking powder - 10 g
vanilla sugar - 8-10 g
salt - a pinch
cranberry (frozen) - 200 g + 1/2 tbsp flour

For glaze:
icing sugar
lemon juice
The proportions depend on how thick you want it to be.

*All the ingredients should be at room temperature

📝Instructions:
Mix eggs, salt, sugar and vanilla sugar until smooth
Add sour cream (or yogurt) and mix
Add butter and oil. Mix well
Add sifted flour and baking powder. Add as much flour as needed until desired consistency (like thick sour cream)
Sprinkle the cranberries with flour
Mix the batter and cranberries
Prepare a 1 liter (or 8 inch springform) cake pan and fill it with the batter half full
Bake at 180°C for about 40 - 50 minutes (depending on your oven).
