One-Pot Tomato & Garlic Pearl Couscous

Ingredients

1 cup pearl couscous
½ cup coconut milk or heavy cream
1 teaspoon red pepper flakes (reduce the amount if you prefer less heat)
1 1/2 cups water
1 tbsp. tomato paste
1-2 cups cherry tomatoes
10 cloves garlic, minced
¼ cup olive oil
Salt & pepper to taste
For serving:

Grated Parmesan cheese (about 2 teaspoons)
Instructions

Place a medium saucepan over medium-high heat. Add olive oil, red pepper flakes, and minced garlic. Sauté for about 30-60 seconds.
Add the cherry tomatoes and cook until they soften slightly. Then, gently and carefully press the tomatoes to release their juices.
Mix in the tomato paste.
Add the pearl couscous, stirring well to combine. Continue stirring for about 1-2 minutes.
Gradually pour in the water while continuing to stir. Cook until the mixture thickens.
Add the coconut milk or heavy cream, lower the heat, and continue cooking for about 10 minutes. Make sure to stir frequently.
Cover the saucepan and allow to cook for an additional 5-10 minutes.
Serve topped with grated Parmesan cheese.
Notes

At this point, try the couscous. If it’s a bit hard, you can add a bit more water and cook for a little longer, stirring regularly.
It's crucial to stir the couscous throughout the cooking process to prevent it from burning or sticking to the bottom of the pan.
If you have leftovers, the couscous may become slightly sticky the next day. If this happens, add a bit of liquid (cream or water) and stir over medium heat. This should refresh the dish.

Serve with additional red pepper flakes, grated Parmesan cheese, and a dash of black pepper.
