Recheado Masala | Goan Rechaad Masala | GOAN RECHEADO MASALA
This masala is famous in Goa and you will find it mostly in every home. This Masala is used in stuffing Fish (Pomfret, Mackrels etc) It is also used to make chicken curry.
Ingredients -
10- 12 Bedki red chillies
15 garlic pods, peeled
3 inch ginger, roughly chopped
1 tsp turmeric powder
1 tsp cumin seeds
20 black peppercorns
20 cloves
5 (2 inches cinnamon)
A small ball of tamarind, about the size of a lime
2 tbsp Vinegar to grind the masala to a paste
3 Tsp Sugar
1 tsp Salt
2 tsp Turmeric
One Onion
Roast the onion on fire, once cooked peel the burnt skin of the onion. Wash the onion in running water to remove all the burnt skin.
Grind all the ingredients in the mixer grinder, do not use water. Instead use the Vinegar and make it to a fine paste.
Once the paste is ready
Add 1 Tbsp of Vegetable Oil in the Pan and cook the paste for 5 mins on a low flame. (This is optional)
Recheado Masala is ready and can be stored in a air tight container in a refrigerator. It can be store for weeks and months.
