Grilled Marinated Lime Basil Chicken-Easy and Keto that's perfect for meal prep!

Want to create a delicious dinner that can also be used for lunches and dinners throughout the week? This is the ultimate meal prep hack!

Process:
Pound out chicken breasts until they are an even thickness. We're not aiming for any specific thickness, just trying to get them even so that they cook more evenly.
Place in a zip bag.
Add enough marinade to be able to cover all of the chicken.
Remove air from the zip bag and zip closed.
Double bag to ensure that there's less chance of the marinade leaking while in the fridge.
Place in the fridge for several hours (for this meal, the chicken soaked for 6 hours).
At the time that you fire up your grill to pre-heat, take the marinading chicken out of the fridge to take the chill off.
Clean grill grates with a sturdy brush.
Once grill is ready, drop the chicken breasts onto the hot grates and close the lid and keep the temps on max.
Wait 2:30 - 2:45.
Open the grill and rotate the chicken breasts 45 degrees (same side, just sort of twist their orientation).
Close the lid and wait another ~2:45.
Open the lid and flip the chicken to cook on the other side.
Close the lid and wait another ~ 2:45.
Open the lid and rotate the chicken breasts 45 degrees (just like you did earlier).
Close the lid and wait another ~ 2:45.
Check temps of the chicken with an instant read thermometer. Once temps are ~ 160 degrees, pull chicken from the heat and turn off the grill.
Let chicken rest for ~ 5 minutes to let the juices re-distribute.
Slice and serve!

I enjoyed these over a bed of fresh steamed broccoli. Delish!
