Cook and peel beef tongue properly. Great beef tongue recipe
Boil water in a large saucepan
Add 2 teaspoons of salt
Make sure you don't put your tongue in until the water starts to boil!
When the water boils, remove the foam.
Add spices: bay leaf, peppercorns, coriander, dried garlic, paprika.
Reduce the heat to a minimum
Boil tongue depending on size: 2-3 hours.
The tongue in the video was cooked for 2.5 hours
Put the tongue in very cold water.
Add ice so the tongue can be easily peeled.
Don't pour out the broth, we'll need it again!
Leave it in ice water for 3-4 minutes
Let's clean the tongue from the skin. It should be easy to remove.
If it doesn't work, use a knife
Put the peeled tongue in the broth for 5-10 minutes. It will be very juicy
Cut the tongue
You can serve the dish with green peas, parsley and horseradish
