No canned soups in this casserole - a healthier option and we loved it! It is scrumptious, delicious and yummy! Martha also enjoyed creating a 2 layer cupcake. SCALLOPED POTATOES AND HAM CASSEROLE
Melt 1/2 cup butter over medium heat
Add 1/2 cup flour - stir for about 2 minutes
Slowly whisk in 6 cups of half & half or whole milk
Simmer on low for 5-8 minutes until thick - stir often
Remove from heat
Add 3 cup shredded cheddar cheese (mild or sharp)
1 cup shredded parmesan cheese
salt and pepper
Stir until cheese is melted
Add 2 lbs diced ham
Mix in 10 cups shredded potatoes
Place in a 9x13 baking dish
Bake at 350 until bubbly - about 45 minutes
Let rest for 5 minutes before serving
