â–¢1 cup Yellow onion diced
â–¢3 cloves Garlic minced
â–¢1 can Muir Glen Organic Diced Tomatoes 14.5oz
â–¢1 can Black beans rinsed and drained, about 1.25 cups
â–¢1.5 cup Corn frozen
â–¢1 cup Red Bell Pepper diced
â–¢1 cup Green Bell Pepper diced
â–¢1 Jalapeno finely diced
â–¢3 tablespoon Taco seasoning (see notes for options)
▢½ teaspoon Salt adjust to taste
â–¢2.5 cup Vegetable Broth
▢¼ cup Cilantro leaves chopped, to garnish
