Easy Szechuan Chicken Recipe

Szechuan Chicken Recipe:
Ingredients:
For the Chicken Marinade:
500g chicken strips
1 tablespoon soy sauce
1/2 teaspoon white pepper powder
1/2 teaspoon black pepper powder
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon chili flakes
1 egg
1/4 cup corn flour
For the Sauce:
1 cup chicken stock
2 tablespoons soy sauce
2 tablespoons szechuan sauce
1/2 cup tomato ketchup
1 tablespoon corn flour
1/3 teaspoon black pepper powder
1/3 teaspoon salt
For Stir-Frying:
3 tablespoons vegetable oil
1/2 cup julienned red bell pepper
1/2 julienned green bell pepper
1/2 cup sliced onions
1 tablespoon chopped garlic
1 tablespoon chopped ginger
1 green chili, chopped
Chopped green onions (for garnishing)
Instructions:
1. Add the chicken strips, white pepper powder, black pepper powder, garlic powder, chili flakes, salt, soy sauce, egg and corn flour in a bowl. Mix well and let it marinate for 15-20 minutes.
2. While the chicken is marinating, prepare the sauce. In a separate bowl, add chicken stock, soy sauce, szechuan sauce, tomato ketchup, black pepper powder, salt and corn flour. Mix well and set the sauce aside.
3. Heat oil in a deep pan over medium heat. Once the oil is hot, add the marinated chicken strips in batches and fry until they turn golden brown and crispy. Remove the fried chicken strips from the oil and place them on a paper towel-lined plate to drain excess oil. Set aside.
4. Heat 3 tablespoons of oil in a wok over medium heat. Add chopped garlic, ginger, green chili and sauté for 30-40 seconds.
5. Add sliced onions, julienned red and green bell pepper to the wok. Sauté for 1-2 minutes or until they are slightly softened but still crisp.
6. Pour the prepared sauce over the vegetables and cook until the sauce thickens.
7. Once the sauce thickens, add the fried chicken strips to the sauce. Mix well and cook for 1-2 minutes.
8. Garnish with chopped green onions.
9.Serve hot with fried rice.
