SALSA VERDE SHRIMP SKILET ENCHILADAS | Quick & Easy Version!

My Shrimp skillet Enchiladas is one of the easiest and flavorful meals that I’ve made! It combines shrimp, with a delicious sauce made up of jarred salsa verde, green chilies and sour cream, then I stir in some corn tortillas strips and top it with lots of melted cheese! And the best part is that it all cooks up in 1 skillet!

Salsa Verde Shrimp Skillet Enchiladas

Ingredients
1 lb shrimp, peeled
2 cups good salsa verde (I use Trader Joe’s)
4 oz can green chilis
1/2 cup sour cream
10 corn tortillas, cut into strips
2 cups shredded Monterey jack cheese
Optional for garnishing - chopped cilantro, sliced jalapeños

Directions
Combine salsa verde, green chilis, and sour cream in a bowl.
Season shrimp with salt and pepper. Heat oil in a pan over medium high heat and cook shrimp until cooked through, about 1-1/2 minutes per side. Remove and slice shrimp into 3rds.
Pour salsa verde sauce into the pan and bring to a boil. Season with a little salt if desired. Lower heat to medium low, cover and cook for 5 minutes.
Stir in shrimp.
Turn up heat and stir in tortillas until warmed through.
Top with shredded Monterey Jack cheese and place under the broiler until cheese is melted and bubbly. Garnish with chopped cilantro and sliced jalapeños if desired.
