Ingredients
Recipe 1:
4 pig trotters
A piece of ginger
2 tbsp cooking wine
1 onion
Ginger, the size of a finger
Green onion
3-4 hot peppers
2 cloves of garlic
Put in a spice bag:
1 tsp chili flakes
4 pieces of cloves
Cinnamon
Bay leaf
Star anise
3 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp oyster sauce
2 tsp salt
2 tsp sugar
500 ml light beer
Water

Recipe 2:
6 pig ears
1 onion
carrot
2 stalks of celery
5 cloves of garlic
pimento
4 bay leaves
1 teaspoon black peppercorns
1 tablespoon salt (or to taste)
1 tablespoon sugar
½ teaspoon coriander seeds
100 ml soy sauce
2.5 liters of drinking water

Potato salad:
700g potatoes
100g bacon
1 tablespoon vegetable oil
1 red onion
250 g mushrooms
Black pepper
Salt
2 cloves of garlic
1 teaspoon whole grain mustard
80 ml pickle brine
5-6 pickles
Sauerkraut (optional)
