The French Bresse chicken debuted in 1591. by the year 1600 the moist flavorful breeze poultry that caught the attention of Kings, King Henri-Quatre of France, the rumor was that this king tried every way possible to find a way to go to that area to enjoy the flavor of the French Bresse chicken.
The breed was almost lost by the 1900s as breeders crossbred and tried to achieve a large body bird. A pure Bresse chickens we're left and intensive breeding program was established to ensure the survival of the breed. A standard of perfection was established and a new club was began to assure the breed carried on. The breed gained legal status in France in 1957.

In 2011 the United States and Canada received there first Bresse chickens.
