Ingredients for Strawberry French Toast Roll-Ups:

7 slices of bread
2 eggs
1/4 cup milk
3 tbsp caster sugar
1/4 teaspoon vanilla essence
1/2 cup strawberry jam
1/3 cup chopped strawberries
Butter for frying
1/2 cup caster sugar + 1 tbsp cinnamon powder (for rolling)

Instructions:

1. Add eggs, milk, caster sugar and vanilla essence in a shallow dish. whisk until the sugar dissolves.
2. In a separate dish, combine caster sugar and cinnamon powder (for rolling).
3. Trim the crusts off the bread slices.
4. Use a rolling pin to flatten each slice of bread.
5. Spread 1 and 1/2 teaspoons of strawberry jam onto each slice of bread.
6. Sprinkle the chopped strawberries over the jam.
7. Roll up each slice of bread tightly, starting from one end. Make sure the jam is securely enclosed.
8. Melt some butter in a frying pan over medium heat.
9. Dip each roll-up into the egg mixture, coating it evenly.
10. Place the coated roll-ups in the pan.
11. Cook the roll-ups for 1-2 minutes or until they are golden brown and crispy on all sides.
12. Roll the french toast roll-ups in the cinnamon sugar mixture.
13. Serve warm and enjoy!
