Ingredients for Chicken Kachori:
__________________________________________________________________________
1 - 300g boiled and shredded chicken
2 - 1 cup shredded cabbage
3 - 2 tsp peri peri seasoning
4 - 1/2 tsp cumin powder
5 - 1/2 tsp coriander powder
6 - 1/4 tsp turmeric powder
7 - 1 tbsp chili sauce
8 - 2 tbsp mayonnaise
9 - Salt to taste
10 - 6 frozen parathas

Instructions:
1. Thaw the frozen parathas according to the package instructions.
2. Heat oil in a wok over medium heat. Add the boiled chicken and cook for a minute.
3. Now add the shredded cabbage and cook for a minute.
4. Add peri peri seasoning, cumin powder, coriander powder, turmeric powder, chili sauce, mayonnaise and salt to taste. Mix well and cook for 3 minutes until the spices are well combined with the chicken.
5. Once the chicken mixture is ready, remove it from the heat and let it cool down completely.
6. Take a thawed paratha and place 3 tablespoons of the chicken mixture in the center.
7. Take the edge and make small pleats and gather the pleats to join in the center. When the pleating is complete, the filling will not be visible and it'll look like a dumpling.
8. Repeat this process with the remaining parathas and chicken mixture.
9. Heat oil in a wok over medium-high heat. Once the oil is hot, carefully place the chicken kachoris in the hot oil and fry until they turn golden brown and crispy on both sides. Make sure to fry them in batches to avoid overcrowding the pan.
10. Once fried, remove the chicken kachoris from the oil and place them on paper towels to drain any excess oil.
11. Serve chicken kachoris hot with your favorite chutney or sauce.
