If you're looking for a good cheesecake recipe, you've found it. New York cheesecake with a soft, silky texture and light hints of lemon. Cheesecake is very easy to prepare and the process itself takes a lot of time, but believe me, the result is worth it!
Recipe

The basis:

shortbread 4.6 oz (130 g)
melted butter 1.8 oz (50 g)
2 tablespoons milk

Cream:

Mascarpone cheese 12.3oz (350 g)
powdered sugar 4.2 oz (120 g)
zest of one lemon
cream 30-35% 8.8 oz (250 g)

Syrup:
lemon juice 2 us fl oz (60 ml)
water 3 us fl oz (90 ml)
gelatin 0.4 oz (10 g) + 2 tablespoons water

Lemon coulis:
water 3 us fl oz (85 ml)
lemon juice 3 us fl oz (85 ml)
sugar 4 tablespoons
cornstarch 0.5 oz (14 g)
turmeric 0.04 oz (1 g)
butter 0.7 oz (20 g)

For decoration:
whipped cream and lemon zest

Mold diameter 6.7 inches (17 cm)
