How To Make Bahamian Potato Bread

Ingredients:
- 4 medium-sized Sweet Potatoes (about 4 cups, with purple skin)
- 1 egg
- 1 cup of flour (adjust for desired consistency, more flour for firmer bread)
- Sugar (1/2 to 1 cup)
- Grated coconut (as desired)
- 1/2 teaspoon of nutmeg
- 2 tablespoons of vanilla extract
- 1/2 tin of evaporated milk
- 1/2 stick of unsalted butter
- 1/2 teaspoon of salt

Instructions:
1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. Peel and grate the sweet potatoes.
3. In a large mixing bowl, combine grated sweet potatoes, egg, flour, sugar, grated coconut, nutmeg, vanilla extract, evaporated milk, butter, and salt. Mix until well combined.
4. Grease a baking dish or pan and pour the mixture into it, spreading it evenly.
5. Bake on the top rack of the oven for about 35 to 45 minutes, or until the sides of the bread start to separate from the baking dish/pan.
6. Remove from the oven and let it cool slightly before serving. Enjoy your delicious sweet potato bread!
