Palak Paneer Recipe
Ingredients:
500 grams/1 LB fresh spinach
6 oz paneer - cut into thin rectangle slices
2.5 cups water
2 tbs cooking/veg. oil
1 tbsp butter
2 tbsp ginger-garlic paste
1 tsp whole cumin seeds
1/2 to 1 finely chopped green chili
1/2 red onion - chopped
1/2 tsp ground cumin
1 tsp red chili powder
salt to taste
3 tbsp heavy cream
2 tbsp chopped fresh cilantro/coriander leaves for garnish

Other ingredients:
2 cups ice water

Method
Making Spinach paste/gravy:
Bring to boil water in a saucepan
Add spinach, blanch on medium flame for 2 minutes
Transfer blanched spinach to bowl with ice water
This will stop the cooking process & retain green color of spinach
Next squeeze water from spinach and add to blender/mixer
Grind spinach to a paste

Cooking Palak Paneer:
Heat cooking/veg. oil in saucepan
Add whole cumin seeds & green chili
Once cumin seeds starts popping add chopped onion
Saute until translucent, then add ginger-garlic paste.
Shallow fry mixture for 30 seconds then add spinach paste/gravy
Roast in pan for 3 minutes
Now add salt, red chili powder & ground cumin
Mix well then add paneer slices
Bring to a quick boil then lower flame & heavy cream
Stir in to blend in heavy cream with spinach gravy
Your Palak Paneer is ready!
Transfer to serving bowl & garnish with chopped cilantro/coriander
Enjoy with roti, naan or other India flatbreads
