Ingredients:
- 2 cups Basmati rice
- Assorted vegetables (carrots, peas, potatoes, Shimla Mirch,Baigan)
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- 1/2 cup plain yogurt
- 1/4 cup chopped cilantro (coriander leaves)
- 1/4 cup chopped mint leaves
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Ghee or oil for cooking

Instructions:
1. Wash and soak the Basmati rice in water for 30 minutes. Then, drain the water and set aside.
2. Heat ghee or oil in a large pan. Add cumin seeds and let them splutter.
3. Add sliced onions and sauté until golden brown.
4. Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.
5. Add chopped tomatoes and cook until they turn soft and mushy.
6. Add chopped vegetables and cook for 5-7 minutes until they are partially cooked.
7. Add coriander powder, turmeric powder, and garam masala. Mix well.
8. Add yogurt, chopped cilantro, and mint leaves. Stir to combine everything.
9. Add the soaked Basmati rice to the pan and gently mix with the vegetable mixture.
10. Pour water (1:2 ratio of rice to water) into the pan. Season with salt according to taste.
11. Cover the pan with a lid and cook on low heat for about 15-20 minutes or until the rice is cooked and the vegetables are tender.
12. Once done, fluff the biryani gently with a fork and serve hot with raita or yogurt on the side.
