Keto Pepperoni Pizza Recipe

Ingredients:

For the Pizza Base:

2 cups (~8 oz.) mozzarella cheese
¾ cup almond flour
1 tablespoon psyllium husk powder
3 tablespoons (~1.5 oz.) cream cheese
1 large egg
1 tablespoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper
For the Toppings:

1 cup (~4 oz.) mozzarella cheese
½ cup Rao’s tomato sauce
16 slices pepperoni
Optional: A sprinkle of oregano

Cooking Instructions:

1. Preheat and Prepare:

Begin by preheating the oven to 400°F.
Measure out 2 cups of mozzarella cheese and place it in a microwave-safe bowl, equating to around 8 oz. of cheese.

2. Melt and Combine:

Melt the cheese in the microwave until fully pliable, taking care to avoid excessive browning (typically about 90 seconds).
Incorporate 3 tablespoons of cream cheese and 1 egg into the melted cheese, ensuring thorough mixing.

3. Blend Dry Ingredients:

Add almond flour, psyllium husk powder, Italian seasoning, salt, and pepper to the cheese mixture. Mix until all ingredients are well integrated.

4. Shape and Bake:

Place the dough ball onto a silpat greased with 1 teaspoon of olive oil.
Use your hands to press out the dough, forming a circular pattern as it spreads.
Bake the pizza for 10 minutes on one side. If opting for an upside-down cookie sheet, the pizza can expand without being constrained by the edges.

5. Flip and Bake Again:

Flip the pizza to the other side and continue baking for an additional 2-4 minutes.
6. Apply Toppings:

Take the pizza out of the oven and add your selected toppings (1/2 cup Rao’s tomato sauce, 1 cup mozzarella cheese, and 16 slices of pepperoni).

7. Final Bake:

Bake again for 3-5 minutes or until the cheese has melted to perfection.

8. Cool, Slice, and Serve:

Allow the pizza to cool slightly, then cut it into slices before serving.
Optionally, garnish with a sprinkle of oregano for added flavor.
