COCONUT CAKE
3/4 cup Crisco
3/4 cup Butter or Margarine
3 cup Sugar
7 Eggs, separated
1 1/2 cup Buttermilk
3 cup All Purpose Flour
1 3/4 cup Sweetened Coconut Flakes
1/8 teaspoon Cream of Tartar
1 1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1 1/2 teaspoon Vanilla Extract
3/4 teaspoon Coconut Extract

Mix crisco and butter together for a minute
Add sugar and cream together until light and fluffy - about 4-5 minutes
Add egg yolks, one at a time, mixing well between each addition.
Add soda, salt, vanilla extract and coconut extract
Give a light mix,
Add flour alternating with buttermilk. Mix well

Beat egg whites until a little frothy, add cream of tartar and continue beating until whites are a soft peak.

Fold the coconut into the cake batter
Fold the beaten egg whites into the cake batter.

Bake 350 for 30 minutes or until toothpick clean

Makes 3 - 9" layers and 9 big cupcakes

Frost with Vanilla Buttercream Icing (cream cheese icing is good as well)
Cover with coconut flakes
