My favorite, super easy carrot cake with cream cheese frosting is quick to mix up with this one-bowl method recipe and bakes up perfectly every time! We enjoy our carrot cake all year long, but we will always have one made up for Easter, too!

3/4 cup coconut oil
4 large eggs (room temperature)
2 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 tsp orange peel (dried)
1/2 tsp salt
1 1/2 cups light brown sugar (packed)
1/2 sugar
1/2 cup unsweetened applesauce
3 cups grated carrots (3-4 medium to large carrots)
1 cup all-purpose flour
1 cup cake flour
