For the Eggplant Rolls:
2 large eggplants, sliced lengthwise into thin strips
Olive oil for brushing
Salt and pepper to taste
For the Kofta:
1 lb ground lamb or beef
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
Salt and pepper to taste
For the Sauce:
1 can (14 oz) crushed tomatoes
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Brush the eggplant slices with olive oil and season with salt and pepper. Place on a baking sheet and roast in the oven for 15-20 minutes, or until tender.
In a large bowl, combine the ground lamb or beef, onion, garlic, parsley, mint, cumin, coriander, cinnamon, salt, and pepper. Mix well to combine.
Form the meat mixture into small oval-shaped kofta and place on a baking sheet. Bake in the oven for 15-20 minutes, or until cooked through.
In a saucepan, combine the crushed tomatoes, garlic, cumin, coriander, cinnamon, salt, and pepper. Cook over medium heat for 10-15 minutes, or until the sauce has thickened.
To assemble the eggplant rolls, place a kofta on each eggplant slice and roll up. Place the rolls in a baking dish and pour the sauce over the top.
Bake in the oven for 10-15 minutes, or until heated through.
Serve the eggplant rolls with kofta hot, garnished with fresh parsley or mint if desired.
