Choresht Bademjune was the first Persian dish I really enjoyed eating. My mother-in-law often served this on Friday night when we would visit as newlyweds, and this was my favorite of all of the foods she made. A tomato, beef, and eggplant stew, this is perfect served over rice. And it freezes beautifully, so you can make a double batch and have another meal in the future.
