Disclaimer : Make sure mutton is very tender if you want to try this. If mutton is hard it won’t cook

Ingredients:
For Biryani masala :
👉🏻Cloves – 6
👉🏻Mace - 1
👉🏻Nutmeg – 1/4th
👉🏻Star anise - 3
👉🏻Cardamom – 6
👉🏻Bay leaves – 2
👉🏻Kapok bud – 2
👉🏻Cumin seeds - 1 tsp
👉🏻Black cardamom – 2
👉🏻Fennel seeds – 2 tsp
👉🏻Coriander seeds – 2 tbsp
👉🏻Black pepper - 1 tsp
👉🏻Cinnamon – 2 inch
✨Dry roast the above spices in low flame till they turn aromatic
✨Let them cool down and blend them to a fine powder
✨Prepare fried onions
👉🏻Onions - 4 medium sized sliced

For marination:
👉🏻Mutton – 1Kg( very tender)
👉🏻Turmeric powder – 1 tsp
👉🏻Salt
👉🏻Red chilli powder - 2 tsp
👉🏻Ginger & Garlic paste - 1tbsp
👉🏻1 lemon juice
👉🏻Masala powder blended previously
👉🏻Fried onion oil – 1/2cup
👉🏻Mint leaves –1/2 cup
👉🏻Coriander leaves – 1/2 cup
👉🏻Fried onions – 1/2 cup
👉🏻Curd – 1 cup
✨Mix everything thoroughly and marinate for 30 minutes

For biryani:
👉🏻Ghee – 1 tsp
✨Spread ghee in biryani handi and add the marinated mutton to it

For rice preparation:
👉🏻Oil – 4 tbsp
👉🏻Cloves – 4
👉🏻Cardamom – 4
👉🏻Mace flower – 1 flower
👉🏻Bay leaves – 2
👉🏻Green chillies – 10
👉🏻Mint leaves – 1 cup
👉🏻Coriander leaves – 1 cup
👉🏻Shahjeera – 2 tsp
👉🏻Cinnamon – 1 inch
✨Add 2 cups of water for 1 cup of soaked basmati rice(soaked for 1 hour if possible)
✨Add salt
✨Add the soaked rice
✨Let it boil for 5-10min and then add lemon juice to it
✨Leave it till the rice is 80% cooked

For final assembly:
✨To the marinated mutton add the 80% cooked rice
✨Add fried onions and coriander leaves
✨Repeat the layers
✨Add ghee , saffron milk and blended masala on the top
✨Let it cook for 40min to 1 hour depending on how soft your mutton
✨Switch of the flame and leave it aside for 15min and it’s done ☑️
