Instructions:
Making Boondi:

Heat ghee or oil in a deep frying pan or kadhai over medium heat.
Hold a perforated ladle or slotted spoon over the hot oil and pour a ladleful of batter on top.
Tap the ladle gently so that small droplets of batter fall into the oil. Fry until they turn golden brown. Repeat until all the batter is used.
Remove the boondis from the oil and drain excess oil by placing them on a paper towel.
Making Sugar Syrup:
In a large pan, add sugar and water. Bring it to a boil, stirring continuously until the sugar dissolves completely.
Simmer the syrup until it reaches a one-string consistency. To test, take a small amount of syrup between your thumb and index finger; it should form a single string when pulled apart.
Add saffron strands and cardamom powder to the syrup for flavor.
Making Laddus:
In a large mixing bowl, combine the boondi and paneer (if using) while they are still warm.
Gradually pour the hot sugar syrup over the boondi mixture. Mix well until everything is evenly coated with the syrup.

Grease your palms with ghee or oil and take a small portion of the mixture.
