With the prices of meat nowadays its no wonder folks are skipping the high priced beef brisket and going for alternatives like beef chuck roast. This example I show you how to use a Weber kettle charcoal grill and slow cooked a 7 lbs chuck roast smoked low and slow on the Weber Performer 22" inch charcoal grill. Its an iconic cooker that is probably the most versatile BBQ brill around. Many try to copy it but none can perfect the simplicity and elegance of this Weber kettle grill. I basically take a chuck roast and season with salt pepper and garlic, or SPG. I even used Texas post oak chunks and Ridge real hardwood charcoal for that Texas brisket style barbecue but using a much cheaper piece of meat. And I think more forgiving. I used the snake method to set up my coals and I show you how I did that.
