Ingredients:
1 cup almond butter
1/4 cup honey or maple syrup
2 cups rolled oats
1/2 cup shredded coconut
1/4 cup chocolate protein powder
1/4 cup mini chocolate chips
1 teaspoon vanilla extract
Pinch of salt
Instructions:
Prepare Almond Butter Mixture:
In a microwave-safe bowl, combine almond butter and honey (or maple syrup). Microwave for 30 seconds or until softened. Stir until well combined.
Mix Dry Ingredients:
In a separate bowl, mix rolled oats, shredded coconut, chocolate protein powder, mini chocolate chips, vanilla extract, and a pinch of salt.
Combine Wet and Dry Ingredients:
Pour the almond butter mixture over the dry ingredients. Stir until everything is evenly coated and forms a thick, sticky dough.
Press Into Pan:
Line an 8x8 inch baking pan with parchment paper. Transfer the mixture into the pan and press it down firmly and evenly using a spatula or your hands.
Chill and Set:
Place the pan in the refrigerator for at least 1 hour to allow the bars to firm up and set.
Slice Into Bars:
Once chilled, remove the pan from the refrigerator and lift the parchment paper to remove the block of bars. Place it on a cutting board and slice into bars of your desired size.
Serve or Store:
Serve the Almond Joy Protein Bars immediately, or store them in an airtight container in the refrigerator for up to one week.
