Ingredients:

8 oz thin rice noodles, cooked and cooled
1 cup shredded napa cabbage
1 cup julienned carrots
1 red bell pepper, thinly sliced
1 cucumber, julienned
1/2 cup edamame, steamed
1/4 cup fresh cilantro, chopped
1/4 cup green onions, sliced
1/4 cup sesame seeds, toasted

For the Dressing:

3 tablespoons soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon honey
1 clove garlic, minced
1 teaspoon fresh ginger, grated
Salt and pepper, to taste

Instructions:

Prepare Noodles:

Cook the thin rice noodles according to package instructions. Drain, rinse under cold water, and set aside.

Whisk Dressing:

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, salt, and pepper. Set aside.

Combine Ingredients:

In a large mixing bowl, combine the cooled rice noodles with shredded napa cabbage, julienned carrots, sliced red bell pepper, julienned cucumber, steamed edamame, chopped cilantro, and sliced green onions.

Add Dressing:

Pour the prepared dressing over the noodle and vegetable mixture. Toss gently to coat everything evenly.

Chill Before Serving:
