Ingredients:

1 lb rotini pasta, cooked and cooled
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh or thawed if frozen)
1 cup cherry tomatoes, halved
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 avocado, diced
1/3 cup olive oil
1/4 cup lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and black pepper, to taste
Optional: Cotija cheese for garnish

Instructions:

Cook Pasta:

Cook the rotini pasta according to package instructions. Drain and let it cool to room temperature.
Prepare Dressing:

In a small bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Adjust the seasoning to taste.

Combine Ingredients:

In a large mixing bowl, combine the cooked pasta, black beans, corn, cherry tomatoes, red and green bell peppers, red onion, cilantro, and diced avocado.

Add Dressing:

Pour the southwestern dressing over the pasta and vegetable mixture. Gently toss until everything is evenly coated.

Chill and Marinate:

Cover the bowl and refrigerate the Southwestern Black Bean Pasta Salad for at least 1 hour to allow the flavors to meld.

Garnish and Serve:
