The Ultimate High Protein Vegan Burger Recipe

This is my ULTIMATE vegan burger recipe. High protein, the perfect texture, tonnes of flavour AND super healthy! If you only ever make ONE of my recipes make it THIS!

** RECIPE **

Ingredients

50g TVP mince
1 tbsp soya sauce
1/2 tbsp tomato puree
250ml water
1 tsp cumin
1 tsp paprika
1 tsp dried herbs
1 tsp garlic powder
Pinch Black pepper
35g chickpea flour
15g breadcrumbs
1 tbsp flax ground seeds

Method

To a pan add the TVP mince, soya sauce, tomato purée, water, cumin, paprika, mixed herbs, garlic and black pepper and mix.
Add the lid and bring to the boil.
Remove the lid and gently simmer until all the water has evaporated (approximately 10 minutes).
Add the flax to a bowl along with 3 tbsp water, mix and set aside.
Add the gram flour, breadcrumbs and flax egg to the TVP mixture and mix. Set aside for 10 minutes.
Preheat the oven to 200 degrees Celsius / 400 Fahrenheit.
Divide the mixture in 2. Roll each one into a ball and then flatten them out in the palms of your hand. Place on a baking tray lined with parchment paper.
Bake for 40 minutes flipping halfway.
Serve on a wholemeal bun with the fixings of your choice.
