Ingredients:

For the Muffins:
1 cup old-fashioned oats
1 cup buttermilk
1 cup all-purpose flour

1/2 cup unsalted butter, melted
1/2 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 and 1/2 cups finely diced apples (such as Granny Smith)

Instructions:

Preheat Oven:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.

Soak Oats:

In a bowl, combine the oats and buttermilk. Let them soak for 15-20 minutes.

Mix Dry Ingredients:
